Jason Erb
Jason Erb studies the food and medicine of Japan and Thailand using techniques from economic anthropology, symbolic anthropology and material culture studies. He has written about the vitamin deficiency disease beriberi and the early macrobiotic movement in Japan . He is currently doing research on the Japanese pharmaceutical industry, on salt in Japanese culture and ritual, and on various health food movements in Japan . His advisor is Emiko Ohnuki-Tierney.
